Lemon Garlic Butter Baked Cod

  1. Preheat the oven to 375u0b0F.
  2. Line a large baking sheet with parchment paper.
  3. Season the cod fillets on both sides with salt and pepper. Arrange the fillets on the baking sheet. Sprinkle the minced garlic and butter pieces evenly over the fillets.
  4. Cut the lemon in half. Slice one half into thin rounds, 1-2 per fillet, setting aside the remaining lemon for garnish. Lay the slices directly on top of the cod fillets.
  5. Bake the cod for 10-20 minutes on the middle rack of oven, depending on the thickness of the fillets (about 10 minutes per inch of fillet thickness), until the crust is golden brown and the fish flakes easily with a fork.
  6. Check to see that cod is done. Remove from oven or add time as needed.
  7. Squeeze fresh lemon juice over the fillets and serve immediately.
