Apple-Cinnamon Pecan Cake
- 2 c. all-purpose flour
- 2 tsp. baking powder
- 1 tsp. ground cinnamon
- 1/2 tsp. ground nutmeg
- 1/2 c. margarine, softened
- 1 c. granulated sugar
- 1 egg plus 2 egg whites
- 1 tsp. vanilla
- 2/3 c. undiluted evaporated low-fat milk
- 3 c. peeled and diced shredded baking apples
- 3/4 c. chopped pecans
- 2 Tbsp. powdered sugar
- Preheat oven to 350u0b0.
- In medium bowl, combine flour, baking powder, cinnamon and nutmeg.
- Set aside.
- In a large mixer bowl, cream margarine and sugar. Beat in eggs and vanilla.
- With mixer at low speed, alternately add flour and milk, ending with flour mixture.
- Stir in apples and pecans.
- Spread batter evenly into lightly greased 9 x 13-inch baking pan.
- Bake 40 to 45 minutes or until wooden pick inserted in center comes out clean.
- Cool 20 minutes.
