Easy Potato And Ham Corn Chowder
- 4 small potatoes cut into small chunks
- 1 cup cooked ham Chopped and Quartered
- 1 1/2 cups chicken stock Additional stock or water if needed
- 3/4 cup heavy cream
- herb
- soup mix
- 2 green onions Chopped
- 1/2 small yellow onion Chopped
- 1 large carrot Sliced or Chopped
- 1 celery stalk Chopped
- 1/4 cup butter
- 1/2 cup jack cheese Monterrey
- 1/4 cup grated Parmesan cheese
- salt
- pepper
- 1 can corn
- Melt butter in sauce pan; saute potatoes, yellow onion, carrot, and celery for 5 minutes.
- Add green onions, chopped ham, chicken stock, heavy cream, and Lipton Herb & Garlic Soup Mix.
- Add salt and pepper to taste, as well as small can (or frozen) of corn.
- Additional chicken stock may be needed.
- Cook on low heat until potatoes are tender.
- Add cheeses and stir until melted.
- Serve with sliced French Bread or Parmesan crackers.
