Rich Beef And Smoked Sausage Goulash
- 4 tablespoons sunflower oil
- 4 smoked sausages dry-cured
- 3 7/8 pounds stewing beef
- 2 1/2 cups onions diced
- 7/8 pound button mushrooms
- 3 teaspoons dried oregano
- 3 tablespoons tomato puree
- 3 tablespoons plain flour
- 2 11/16 cups chopped tomatoes cans
- 3 peppers mixed, deseeded and sliced
- 1 beef stock cube crumbled
- 2 tablespoons paprika
- 4 tablespoons fresh parsley chopped
- crusty bread to serve
- Preheat the oven to 325u0b0F. Heat 2 tbsp oil in a Dutch oven and sear beef in batches for 3-4 mins.
- Add the onions, mushrooms, oregano and seared meat to the pan and saute for 2-3 mins. Stir in the tomato puree and flour and saute for 1-2 mins. Gradually stir in 4 1/4 cups water. Add the tomatoes and peppers, then stir in the bouillon cube and paprika. Cover and place in the oven for 2 hours.
- Heat 2 tbsp oil in a frying pan and fry sausages for 2-3 mins, stirring. Add the sausage to the soup and season to taste, adding more paprika if desired. Sprinkle the soup with parsley and serve with crusty bread.
