Garden Goodness Soup
- 1 mirepoix 14.5 container, or 1 cup each chopped carrots, onion, and celery
- 2 tablespoons butter
- 10 ounces asparagus ends removed, cut in 1 inch pieces
- 3 ounces arugula wild
- 6 ounces broccoli slaw
- 4 cloves garlic peeled and cut in half
- 2 low sodium chicken broth cartons, 64 oz
- 3 ounces creme fraiche
- 1 teaspoon salt
- 1/4 teaspoon ground black pepper
- melt butter in a large pot over medium heat and add mirepoix. let cook until softened, about 3 or 4 minutes
- add asparagus, arugula, slaw, and garlic
- pour in chicken broth to cover all vegetables. bring to a boil, then reduce heat to simmer (medium-low heat) 25 minutes
- remove from heat, and using an immersion blender, blend soup until very smooth
- stir in creme fraiche, salt, and pepper. return to low heat to keep warm before serving. Serve immediately or let cool and then refrigerate
