Garden Goodness Soup

  1. melt butter in a large pot over medium heat and add mirepoix. let cook until softened, about 3 or 4 minutes
  2. add asparagus, arugula, slaw, and garlic
  3. pour in chicken broth to cover all vegetables. bring to a boil, then reduce heat to simmer (medium-low heat) 25 minutes
  4. remove from heat, and using an immersion blender, blend soup until very smooth
  5. stir in creme fraiche, salt, and pepper. return to low heat to keep warm before serving. Serve immediately or let cool and then refrigerate
