Lentil And Goat Cheese Salad
- 4 tablespoons lentils
- 1 cup arugula
- 2 cups spinach
- 8 cherry tomatoes
- 4 tablespoons beet grated
- 1/2 cup cornnuts store-bought or homemade
- 200 grams goat cheese
- 1 teaspoon mustard strong
- 4 teaspoons apple cider vinegar
- 8 teaspoons olive oil
- 1 teaspoon honey
- Soak the lentils in water with salt overnight.
- The following day, place in a saucepan. Add enough water to cover and cook for 10 minutes. Drain and pour cold water on top to stop the cooking process.
- In a plate, place a bed of arugula and spinach. Add the cherry tomatoes, beet, and corn nuts.
- Melt the cheese in the microwave for 20 seconds and add to the salad.
- Mix the mustard, apple vinegar, olive oil, and honey.
- Pour on the salad and serve.
