Shepherd'S Pie
- 2 1/4 pounds potatoes floury, peeled and chopped
- 1 tablespoon olive oil
- 1 1/3 pounds minced lamb
- 3 onions medium, finely diced
- 3 cloves garlic finely chopped
- 1 teaspoon chilli powder
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- 1/2 cup semi-skimmed milk
- 2 tablespoons butter
- 1 pinch nutmeg

- Preheat oven to 400u0b0F. Cook the potatoes in boiling salted water for about 20 minutes.
- Meanwhile, heat oil in a pan and cook the ground lamb for about 5 minutes until browned then add the onion and garlic and cook for a few more minutes. Add the chili powder, thyme, rosemary, oregano, and cumin and season to taste with salt and pepper.
- Drain the potatoes and mash, with the milk and butter, until smooth. Stir in the nutmeg and season to taste with salt and pepper. Transfer the meat to a roasting pan, top with the mashed potato and bake for about 20 minutes, until golden brown. Serve with a garnish of rosemary and thyme.
