Lchf Stuffed Chicken Breast

  1. Preheat oven to 180 degrees celcius fan bake
  2. In a food processor, process the spinach, basil, walnuts, feta, lemon juice and pepper until it turns into a mostly smooth paste.
  3. Take a chicken breast and place it flat on a chopping board. With one hand holding the breast flat, make an incision along the side of the breast, cutting through 3/4s of the breast. This will butterfly the breast open in order for you to stuff it.
  4. Open up the chicken breast and place your stuffing mixture down the centre. A 200g chicken breast can take approximately 3 teaspoons of stuffing. Fold one side of the breast over to cover the stuffing. Wrap the breasts firmly in streaky bacon to secure the stuffing.
  5. Place the stuffed breasts seam side down in a baking dish, with the diced butter on top and bake for 25mins. If you find your bacon is getting too crisp cover with tin foil. When cooked remove from the oven and allow to rest for 10 minutes before slicing with a sharp knife.
