Fried Chicken For Camping
- 1 chicken frying, cut in serving pieces
- 1/2 cup biscuit mix
- 1 package onion soup mix dried
- 2 teaspoons dried parsley
- 1 teaspoon salt
- 1/4 teaspoon pepper
- cooking oil
- NOTE: Wash and cut up chicken at home where plenty of water is available. Put chicken in zip shut bags and place in a cooler with ice just before the trip to the campsite. Mix the dried ingredients and put in a covered plastic container to bring to the campsite.
- AT THE CAMPSITE: Prepare a fire of about 30 charcoal briquettes until they are white hot. Make the fire under a grill or in a fire pit where you can use a portable grill.
- Take chicken out of plastic bags and drain well. Shake in mixture of biscuit mix, onion soup mix, parsley, salt and pepper in a clean bag. Place large skillet on grill and heat oil. Add chicken and brown on all sides. When well browned, take away a few of the coals to lower the temperature. Cover and cook for another 30 to 40 minutes until tender. Makes 4 servings.
