Vanilla Chip Maple Cookies
- 1 c. shortening
- 1/2 c. butter or margarine, softened
- 2 c. packed brown sugar
- 2 eggs
- 1 tsp. vanilla extract
- 1 tsp. maple flavoring
- 3 c. all-purpose flour
- 2 tsp. baking soda
- 2 c. vanilla or white chips
- 1/2 c. chopped pecans
- In a mixing bowl, cream the shortening, butter and brown sugar.
- Add eggs, one at a time, beating well after each addition. Beat in vanilla and maple flavoring.
- Combine the flour and baking soda; gradually add to creamed mixture.
- Stir in vanilla chips and pecans.
- Drop by rounded tablespoonfuls 2-inches apart onto ungreased baking sheets.
- Bake at 350u0b0 for 8 to 10 minutes or until golden brown.
- Cool for 2 minutes before removing to wire racks.
