Pear, Arugula, Prosciutto & Herb Cheese Tortilla Pizza

  1. Preheat your oven to 375 degrees. Place the prosciutto on a parchment lined baking sheet and bake for approx. 10 minutes until nice and crisp. Place onto a paper towel to absorb any excess oil.
  2. Crank the heat to 500 degrees. If using a pizza stone like I did, let the pizza stone heat up for an additional 10 minutes after the temp is reached. This will nicely crisp up the tortilla. If not, then heat up a baking sheet and sprinkle with flour before placing the pizza on there.
  3. Slather a layer of the garlic and herb cheese on the tortilla. Add on a layer of sliced pear. Pop in the oven for approx 8 minutes until the tortilla is crisp and the pears just slightly golden.
  4. Remove from the pizza from the oven, top with arugula, some roughly broken up pieces of the crisp prosciutto, a light drizzle of olive oil and finish with fresh cracked pepper.
