Chili Shrimp
- 2 tablespoons oil
- 2 onions finely chopped
- 2 cloves garlic finely chopped
- 2 teaspoons salt
- 1 teaspoon dried chili flakes
- 1 teaspoon ground paprika
- 1 teaspoon cayenne pepper
- 1/2 teaspoon ground turmeric
- 1 lime juiced
- 2 1/4 pounds shrimp medium raw, peeled, deveined, tails intact
- 2 ounces palm sugar grated
- 1 tablespoon tomato paste
- cilantro leaves
- rice
- poppadoms
- Heat oil in a large frying pan over low heat. Add onions and garlic. Cook, stirring, over low heat for 10-15 mins, until onions are caramelized. Add salt and spices. Cook, stirring, for 1 min, or until fragrant. Add 1/2 cup water and lime juice. Simmer, covered, for 3-4 mins.
- Add shrimp, sugar and tomato paste. Simmer, uncovered, for 4-5 mins, until sauce thickens.
- Sprinkle with cilantro and serve with rice and poppadoms.
