Chili Shrimp

  1. Heat oil in a large frying pan over low heat. Add onions and garlic. Cook, stirring, over low heat for 10-15 mins, until onions are caramelized. Add salt and spices. Cook, stirring, for 1 min, or until fragrant. Add 1/2 cup water and lime juice. Simmer, covered, for 3-4 mins.
  2. Add shrimp, sugar and tomato paste. Simmer, uncovered, for 4-5 mins, until sauce thickens.
  3. Sprinkle with cilantro and serve with rice and poppadoms.
