Cherry-Pecan Loaf
- 1/2 c. butter or margarine
- 3/4 c. sugar
- 2 eggs
- 1 tsp. vanilla
- 2 c. flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 c. buttermilk
- 1 c. chopped pecans
- 1 (10 oz.) jar maraschino cherries, drained and chopped
- 1 c. powdered sugar
- 1/4 tsp. vanilla
- milk
- In large bowl, cream butter or margarine, sugar, eggs and vanilla until light and fluffy.
- In a smaller bowl, stir flour, soda and salt.
- Add this to the creamed mixture alternately with the buttermilk.
- Beat all.
- Fold in nuts and cherries.
- Pour batter into greased 9 x 5 x 3-inch loaf pan.
- Bake at 350u0b0 for 55 to 60 minutes.
- Let stand for 10 minutes.
- Remove from pan and cool. Make glaze mixture of powdered sugar and milk to mix.
- Put over cooled loaf as glaze.
