Broccoli And Cheese Soup

  1. Heat butter and stir fry onions until pale golden color.
  2. Add broccoli and garlic and stir fry for few minutes.
  3. Then add the vegetable stock.
  4. Cover and simmer until the vegetables are soft.
  5. Liquidise the soup,season with salt and pepper and pour into a cleanpan.
  6. Add fresh milk and continue heating,but do not allow to boil.
  7. Stir in the grated mozzarella cheese gently and allow to melt.
  8. Serve hot in bowls with a swirl of fresh cream and garnished with coriander.
