Broccoli And Cheese Soup
- 2 onions Large, chopped
- 2 garlic cloves peeled,crushed
- 3 cups broccoli florets
- 3 cups vegetable stock
- 1 cup milk fresh
- 1/2 cup mozzarella cheese grated
- 1/4 cup cream fresh
- 2 tablespoons butter
- salt
- pepper
- coriander chopped, to garnish
- Heat butter and stir fry onions until pale golden color.
- Add broccoli and garlic and stir fry for few minutes.
- Then add the vegetable stock.
- Cover and simmer until the vegetables are soft.
- Liquidise the soup,season with salt and pepper and pour into a cleanpan.
- Add fresh milk and continue heating,but do not allow to boil.
- Stir in the grated mozzarella cheese gently and allow to melt.
- Serve hot in bowls with a swirl of fresh cream and garnished with coriander.
