Chicken Breasts In Mushroom Sauce

  1. Marinate chicken in lemon juice and pepper for 30 minutes. Cook chicken breasts in hot butter or margarine over medium heat for 8 minutes or until golden brown and cooked through; turn occasionally.
  2. Remove chicken from pan and place on a warm platter; cover to keep warm.
  3. Reserve drippings in pan.
  4. Add the mushrooms and chives to the pan and drippings.
  5. Cook and stir until mushrooms are tender.
  6. Stir in the whipping cream; boil gently until slightly thickened, scraping the browned bits from the pan.
  7. Spoon the sauce over warm chicken breasts and serve. Serves 4.
