Apple Cinnamon Muffins From The Daily Bread

  1. Preheat oven to 350F.
  2. Grease and flour a muffin pan with 12 cups.
  3. In a small bowl, mix the butter, hazelnuts, flour, and sugar to a crumble with your fingertips. Set aside
  4. In a large bowl, mix the flour, baking powder, cinnamon, and salt. Set aside.
  5. In another bowl, whisk the apple juice, agave syrup, egg, and oil together. The syrup must be fully dissolved .
  6. Combine the liquid with the flour mixture, mix quickly with a wooden spoon to get a smooth batter.
  7. Wash and cut the apples into strips, and add them to the mixture.
  8. Divide the batter into the 12 muffin pans. Place a little bit of crumble on top of each muffin.
  9. Cook for about 15 minutes.
