Fish And Chips
- 1 1/4 cups all-purpose flour sifted
- 1/2 cup self-rising flour sifted
- 1 2/3 cups beer
- oil for deep-frying
- 6 large potatoes peeled, quartered
- 8 fish fillets small boneless
- tartar sauce to serve
- lemon wedges to serve
- Combine 3/4 cup all-purpose flour and self-rising flour. Season. Gradually whisk in beer until smooth. Set aside for 15 mins.
- Meanwhile, heat oil in a wok or deep saucepan. Working in batches, deep-fry french fries for 5-10 mins, until golden. Drain on paper towels.
- Dust fish fillets in remaining flour, shaking off excess. Dip into batter then deep-fry, in batches, for 2-3 mins, until golden. Drain on paper towels.
- Just before serving, re-fry french fries for 3-5 mins, until crispy. Drain.
- Serve fish and chips with tartar sauce and lemon wedges.
