Chilli Chicken
- 1 1/2 pounds chicken breast skinned and diced
- 4 tablespoons vegetable oil
- 2 cloves garlic fresh, chopped
- 2 inches fresh ginger chopped
- spanish onion
- red pepper chopped
- green pepper chopped
- yellow pepper chopped
- 6 green chillies fresh, chopped
- 2 tablespoons coriander leaves fresh
- 2 fresh tomatoes
- 1 salt to taste
- 1 teaspoon cumin seed white
- 1 teaspoon mustard seed
- 1 teaspoon turmeric
- 1 tablespoon curry powder
- Prepare the chicken.
- Heat the oil and fry cumin seed mustard seeds the garlic ginger and onion for just 1 minute each.
- Add turmeric curry powder and a drop of water just to prevent sticking.
- Add the peppers chilli and the chicken and stirfry for 10 minutes.
- Add the coriander and tomatoes stirfry for 5 minutes minimum.
- Check that the chicken is cooked rightthrough (cut a large piece in haft) and if so serve at once. I
