Cornish Hen And Rice Bake
- 3 Cornish game hens
- 6 oz. pkg. white and wild rice
- 2 Tbsp. chopped onion
- 1 stalk celery, chopped
- 4 oz. can (1/2 c.) mushroom stems and pieces, drained
- 2 c. water
- 3 cubes or 3 tsp. chicken bouillon
- 2 Tbsp. margarine
- 2 Tbsp. honey
- Heat oven to 375u0b0.
- Using kitchen shears or sharp knife, cut hens in half lengthwise through breast-bone.
- In 13 x 9-inch glass baking dish, combine rice mix, onion, celery and mushrooms.
- Heat water and dissolve bouillon; stir into rice mixture.
- Dot with margarine.
- Place game hens cut side down over rice.
- Brush with 1 tablespoon honey; lightly sprinkle with salt.
- Cover with foil and bake at 375u0b0 for 45 minutes.
- Uncover; brush hens with remaining honey.
- Bake uncovered 30 minutes longer or until tender and brown.
