Apple Cinnamon Spaetzle
- 10 1/2 ounces noodles dried spaetzle
- 1/2 cup sugar
- 2 apples red skinned, cored and cut into wedges
- 2 tablespoons lemon juice
- 1/2 teaspoon ground cinnamon
- confectioners sugar for dusting
- 4 sprigs mint or lemon balm, shredded, plus extra sprigs to decorate
- Cook the spaetzle in boiling water following packet directions. Drain well.
- Put the sugar in a skillet with 4 tablespoons water and heat very gently until the sugar dissolves. Bring to a boil and boil until syrupy. Add the apples, lemon juice, cinnamon, and spaetzle and heat gently for 3 minutes until the apples are tender.
- Transfer to serving dishes and dust lightly with confectioners' sugar. Serve sprinkled with the shredded mint or lemon balm, decorating with extra sprigs.
