Hoppin John
- 6 slices bacon
- 1 cup chopped onion
- 1/2 cup chopped green bell pepper
- 1/4 cup chopped celery
- 1 teaspoon minced garlic
- 1/2 pound andouille sausage sliced
- 3 cups chicken broth or stock
- 2 cans black-eyed peas undrained
- 2 cups long-grain rice uncooked
- 1/4 cup green onion sliced
- 2 pinches salt to taste
- 1/2 teaspoon cajun seasoning
- Using kitchen shears, cut the bacon saute until slightly browned. Add the onion, green bell pepper and celery; saute for about 5 minutes until soft. Add the garlic and cook another minute. Add the sausage and cook another 3 minutes. Add the broth and black-eyed peas; bring to a boil. Add green onion. Season with salt, pepper, and Cajun seasoning. Add the bay leaf and return to a boil, cover, reduce heat and simmer for 30 mins. In a baking pan add cooked rice and other ingredients mix together then bake at 350 for 20 to 30 mins or until brown on top..
- Oh and make sure it's not too much liquid you want some liquid so that it's not dry but not too much unless you want to serve it like a gumbo...
