Breadfruit Pumpkin Pie
- 1 breadfruit large, very soft and ripe
- 5 1/2 cups heavy cream
- brown sugar cup organic
- 1/2 cup agave syrup dark
- 1/2 teaspoon salt
- 2 eggs
- 2 teaspoons pumpkin pie spice
- 2 teaspoons cinnamon
- 1 teaspoon ground ginger
- 1/4 teaspoon ground cloves
- 1/4 teaspoon nutmeg
- 1/4 teaspoon ground cardamom
- 2 teaspoons grated orange peel or orange zest
- 1/2 teaspoon vanilla extract
- 9 inches unbaked pie crust
- Mash, and set aside.
- In a large bowl, mix spices, sugars, salt, and orange zest. Beat eggs
- And add to bowl. Add mashed breadfruit.
- Put in a blender and puree. Pour into pie shell.
- Cover piecrust rim with foil. Bake at 350u0b0 for 40-60 minutes
- Depending on the size/softness of fruit to begin with). Insert knife
- Or wooden stick to test for doneness.
