Marinated Cheese

  1. For the marinated Gruyere, mix the Gruyere with the onions, chives, vinegar and 1/2 cup oil. Season with pepper. Transfer to a sealable jar and refrigerate.
  2. For the marinated Mozzarella, mix the Mozzarella, pine nuts, olives, garlic, 1/2 cup oil and the chopped rosemary. Season then transfer to a jar and refrigerate.
  3. Marinate both cheeses for at least 2 hours. To serve, adjust the seasoning and garnish with the reserved rosemary needles.
