Crab Stuffed Tilapia W/ Jasmine Rice & Asparagus (Complete Meal)
- 1 white onion large diced
- 2 celery ribs diced
- 1/2 cup butter unsalted preferred for flavor
- 1/2 cup parsley fresh flat leafed
- 1 cup panko bread crumbs unseasoned
- 16 ounces crab meat consisted of: 8 oz. lump and 8 oz. claw
- 1/4 cup pecan meal ground
- 6 shrimp diced raw, deveined and tail-off
- 2 tablespoons lemon juice
- 1 teaspoon cayenne pepper
- 40 ounces tilapia fillets
- 1/4 cup melted butter
- 1 teaspoon extra-virgin olive oil
- Preheat oven to 400u0b0
- Flake the crabmeat while checking and dispensing shell particles
- In medium-hot non-stick skillet, saute onion and celery in butter until tender
- Add parsley and remove from heat.
- Stir in bread crumbs, crabmeat, shrimp, lemon juice , and cayenne pepper
- Spray cookie sheet with olive-oil cooking spray
- Spread the mixture over the tilapia fillets and roll tightly placing seam side down . BRUSH the melted paprika, oil, and butter over each tilapia.
- Place leftover stuffing around fillets OR freeze for future preps)
- Place in a 400u0b0 oven for about 20-25 minutes until tilapia flakes easily with a fork
