Turkey Gumbo Soup

  1. Peel and dice potatoes.
  2. Rinse and place in 6 qt. pot.
  3. Peel and slice carrots. Slice celery.
  4. Rinse both and add to potatoes. Quarter and slice onion and stir into other vegetables.
  5. Heat and simmer until tender.
  6. Add remaining ingredients and enough water to cover.
  7. Simmer 1 hours and serve.
  8. Soup will be thick and hearty.
  9. For thinner soup, add water or broth.
