Stir-Fried Sweet 'N Sour Chicken
- 2 c. broiler-fryer chicken, cut into bite size pieces
- 2 Tbsp. salad oil
- 1/2 c. sliced green onions, stems included
- 1 1/2 c. sliced green pepper
- 2/3 c. diagonally sliced celery
- 1 (8 3/4 oz.) can water chestnuts, sliced
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1 (6 oz.) pkg. frozen Chinese or snow pea pods
- 1/2 c. chicken broth
- 1 (8 3/4 oz.) can pineapple chunks in heavy syrup
- 1/4 c. sugar
- 1 Tbsp. cornstarch
- 1/2 tsp. powdered ginger
- 2 Tbsp. vinegar
- 2 Tbsp. soy sauce
- Cut chicken with scissors into 1 x 1 x 1/4-inch pieces.
- Heat oil in wok over high heat.
- Add chicken and stir-fry for 5 minutes.
- Add green onion, green pepper, celery and water chestnuts. Stir-fry for 2 minutes.
