Zesty Red Potato Salad
- 6 medium red potatoes (about 5 c.)
- 1 envelope Ranch with bacon flavor dressing mix (1.2 oz.)
- 1 1/4 c. low-fat or nonfat plain yogurt
- 1/3 c. reduced-calorie mayonnaise
- 1/4 c. milk
- 1/2 c. chopped celery
- 1/2 c. chopped red pepper
- 2 Tbsp. chopped green onion or chives
- 2 Tbsp. chopped fresh parsley
- paprika
- Wash potatoes well; do not peel.
- Place in large pot and cover with water.
- Cook, covered, over medium-high heat about 30 minutes or until tender.
- While potatoes are cooking, combine Ranch dressing mix, yogurt, mayonnaise and milk in a small bowl; set aside.
- Remove cooked potatoes from heat; drain well.
- While still warm, cut potatoes into 1-inch cubes and place in large bowl. Gently toss warm potatoes, celery, red pepper, green onion, parsley and yogurt dressing together until mixed well.
- Garnish with paprika and chives and serve warm.
- Serves 6.
