Easy Creamy Carrot Soup Recipe
- 1 tablespoon butter
- 1 tablespoon olive oil
- 1 diced onion finely
- 6 carrots large grated
- 1/2 parsnip grated
- 2 garlic cloves large grated
- 1 piece ginger grated, optional - gives strong ginger taste what some might not like
- grated nutmeg
- dried basil
- coriander dried
- 3 3/8 cups chicken stock
- 1 tablespoon tomato pure
- 1 pinch sea salt
- black pepper
- white pepper
- 1 teaspoon sugar
- water if needed
- Prepare your vegetables: grate your carrots. Parsnip, ginger, garlic and nutmeg.
- Cut your onion finely and preheat on low medium heat your pan and add your butter and olive oil to het up. ndd your onion and stir well. Season with dried basil and coriander. While your onion is getting browned prepare your carrots, parsnip, garlic, ginger and grated nutmeg and add in your pan when your onions are golden. Stir well and do not let any vegetable to burn. After about 3-4 minutes lower your heat and let the carrots to soften up few minutes. now add you chicken stock and stir well. Add your tomato pure as well for extra colour and taste. Season with sea salt and black , white pepper and sugar. net it to simmer. You can add extra water or chicken stock if needed.
- When your soup is ready blend it with a hand mixer.nnServe and enjoy. You can add some cream for extra taste and decoration if desired or sprinkle with some herbs. nnEnjoy.
