Hamburger Florentine Soup
- 1 lb. ground beef
- 5 c. water
- 2 c. cubed potatoes
- 1 c. shredded cabbage
- 1 c. chopped onions
- 1 c. sliced celery
- 1/3 c. uncooked barley
- 1 1/2 tsp. salt
- 1/2 tsp. dried basil leaves
- 1/2 tsp. dried thyme leaves
- 1/4 tsp. pepper
- 1 bay leaf
- 1 (28 oz.) can tomatoes (undrained), cut up
- 1 (14.5 oz.) can Green Giant Kitchen Sliced green beans (undrained)
- 1 (9 oz.) pkg. Green Giant Harvest Fresh frozen chopped spinach
- Brown ground beef in 5-quart saucepan or Dutch oven.
- Drain. Stir in all remaining ingredients, except spinach.
- Bring to a boil.
- Reduce heat.
- Cover and simmer 30 minutes.
- Add frozen spinach.
- Cover and simmer an additional 25 minutes.
- Stir to blend spinach into soup.
- Remove bay leaf.
- Yields 11 (1 1/3 cup) servings.
