Strawberry Shortcake (With Bisquick)
- 16 ounces fresh strawberries
- 2 tablespoons sugar for strawberries
- 1 tablespoon lemon juice
- 2 cups baking mix such as Bisquick
- 1/2 cup milk whole or 2%
- 3 tablespoons sugar for biscuit mix
- 3 tablespoons unsalted butter melted
- 1/2 cup whipping cream
- 2 tablespoons sugar for topping
- 1/2 teaspoon vanilla extract
- Preheat oven to 425u0b0F.
- Remove stem from each strawberry and cut into quarters. Place in medium bowl. Sprinkle sugar and lemon juice over strawberries. Toss with a rubber spatula and set aside.
- Whisk together baking mix, milk, sugar, and melted butter in a medium bowl until just combined.
- Don't overmix; some lumps are good.
- Line a sheet pan with parchment paper. Use a 1/4-cup measure to scoop 6 biscuits onto sheet pan.
- Bake biscuits on middle rack of oven until golden-brown, 12 minutes.
- Place cream, sugar, and vanilla in bowl of stand mixer and whip to soft peaks.
- Check to see that biscuits are done. Remove from oven or add time as needed.
- Allow biscuits to cool for 5 minutes. Using a serrated knife, cut biscuits in half. Layer each with a dollop of whipped cream followed by a spoonful of strawberries. Place biscuit top over and another spoonful of strawberries over top. Serve immediately.
