Fried Chicken Wings With Sauce
- salt to taste
- ground black pepper to taste
- 1 tablespoon fresh coriander chopped
- 1 tablespoon chopped fresh thyme
- 1 tablespoon sweet chili sauce
- 2 cloves minced garlic
- 1 lemon zest and juice
- corn flour or wheat to taste
- 3 tablespoons olive oil
- 1 tablespoon wheat flour
- 7/8 cup milk
- salt to taste
- For the wings: Season the wings with salt and pepper to taste.
- Add the coriander, thyme, sweet chili sauce, garlic, lemon zest and lemon juice and mix well.
- Marinate the wings in the sauce.
- Drain the wings and sprinkle with flour. Heat olive oil in a large skillet and fry the wings over medium heat.
- Use a lid or aluminum foil to prevent the olive oil from popping. When wings are cooked remove from heat and drain on paper towels.
- For the sauce: Place the remaining flour in the skillet and whisk to combine with the pan juices. Add the milk and stir until thickened. Season to taste.
- Serve the wings with the sauce and basmati saffron rice.
