Creamy Garlic Chicken With Sauteed Vegetables Over Angel Hair Pasta
- 2 pounds boneless skinless chicken breasts Marinated, marinate in garlic butter over night
- 12 ounces angel hair pasta I used Alma's angel hair nests
- asparagus tips Baby
- vegetable stir fry medley, fresh broccoli, snow peas, zucchini sticks, squash sticks
- 2 yellow bell peppers small, sliced
- 1 sweet onion medium, sliced, then quartered
- 2 cloves garlic minced
- 2 teaspoons lemon juice
- 2 cups heavy cream
- salt to taste
- basil to taste
- asiago cheese shredded, as much as you like, I used about 1 & 1/2 cups
- 2 tablespoons olive oil
- Cut raw, marinated, chicken breasts into bite sized pieces.
- Heat olive oil in skillet on high, then add chicken. Cook stirring frequently for 5-7 minutes or until no longer pink.
- Spoon chicken onto platter and set aside. Leave juices in pan.
- Add veggies, lemon juice, salt and basil to juices in pan and simmer on medium high heat until tender.
- Cook pasta according to package.
- Once veggies are cooked to desired tenderness, stir in chicken and pour cream over all. Top with shredded asiago and let simmer, on high, until sauce thickens slightly.
- Serve over angel hair pasta and enjoy!
