Coq Au Vin - Slow Cooker Method
- 5 slices bacon diced
- 4 green onions chopped
- 6 chicken breasts
- 1 green bell pepper julienned
- 2 carrots sliced
- 4 pearl onions quartered
- 8 ounces button mushrooms sliced
- 6 red potatoes quartered
- 3 cloves garlic minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme
- 1/2 cup chicken broth
- 3/4 cup red wine
- In a large skillet cook the bacon and green onions until the bacon is crisp.
- Drain well and add in the chicken breast. Brown the chicken on both sides. Set aside.
- Once the bacon has cooled, chop it in pieces.
- Put the green peppers, carrots, onions, mushrooms, potatoes and garlic in the slow cooker.
- Add in the chicken and layer the crispy bacon and onions on top.
- Mix in the spices and pour in the chicken broth.
- Cover and cook on high for 3 hours.
- Pour in the red wine and cook for another 30 minutes to an hour.
