Banana Cranberry Muffins
- 1 1/2 cups flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/8 teaspoon cream of tartar
- 1/2 cup sugar substitute ie, Sugar Twin
- 1 egg beaters 99%% egg substitute or Second Nature
- 1 1/2 cups mashed bananas
- 1 cup margarine ie, Becel Light
- 3/4 cup cranberries fresh or frozen
- Preheat oven to 375.
- Combine first 7 ingredients in large bowl.
- Beat egg, banana and melted margarine together well.
- Add to dry ingredients, stirring just to moisten.
- Fold in cranberries.
- Spoon into 12 medium muffin cups, lightly greased or lined with paper baking cups.
- Bake for 20 25 minutes, or until top springs back when lightly touched.
