Sweet And Sour Chicken

  1. Dice chicken breast and season with salt, pepper and paprika.
  2. Dice pepper, pineapple and onion.
  3. Set aside.
  4. Whisk cornstarch and pineapple syrup until cornstarch is dissolved.
  5. Stir in the tomato paste, vinegar and sugar and mix well.
  6. Heat a little olive oil in a wok or a high-sided skillet.
  7. Saute onion until translucent.
  8. Add chicken and cook until golden, stirring constantly with a spatula.
  9. Add tomato and cook briefly.
  10. Add pineapple and pepper and saute for about 3 minutes.
  11. Drizzle with prepared sauce and stir.
  12. Bring to boil and cook until sauce thickens slightly, stirring constantly.
  13. Serve with white rice.
