Spicy Pork Kebabs With Apple Slaw
- 3 boneless pork chops cut into 3/4-inch pieces
- 1/2 tablespoon sage finely chopped
- 1 clove garlic crushed
- 1 green chili or red, minced
- 1/4 cup vegetable oil
- 3 green apples unpeeled, cored, cut into matchsticks
- 2 small carrots cut into thin ribbons
- 1/3 bunch cilantro sprigs bunch, picked
- lemon wedges to serve
- Combine pork, sage, garlic, half the chili and 1 tablespoon of the oil in a glass or ceramic dish. Cover with plastic wrap; let sit 5 minutes to marinate. Thread pork onto skewers.
- Preheat outdoor grill or broiler to high. Cook pork, turning for 8-10 minutes or until charred and cooked through. Transfer to a plate. Cover with foil; rest for 5 minutes.
- Meanwhile, combine remaining chili, remaining oil, apple, carrot and cilantro in a bowl. Season.
- Serve kebabs with slaw and lemon.
