Chocolate Mousse
- 3 egg yolks
- 6 1/3 ounces chocolate
- 7/8 tablespoon water
- 3 1/4 tablespoons sugar
- 3/8 ounce glucose
- 1 1/2 cups heavy cream

- Add the egg yolks to an electric mixer bowl but do not turn it on.
- Chop the chocolate and melt it in the microwave, 20 seconds at a time until it melts.
- In a saucepan, add the water, sugar, and glucose and bring to a boil, stirring occasionally until the mixture reaches 115 degrees Celsius.
- Turn on the electric mixer to high speed and pour the sugar and glucose mixture in from one side. Beat until the base of the bowl is cool. Add the chocolate and mix.
- Separately, whip the cream. Add some of the cream to the mousse and mix. Then, add the rest of the cream and mix carefully. If the chocolate mixture hardens before the whipped cream is added, add 2 tablespoons hot milk and stir.
- Pour into individual molds and refrigerate for 2 hours before serving. Garnish with strawberries.
