No Cook Mint Patties

  1. In a small mixing bowl, combine the syrup, butter and peppermint extract; beat until well blended.
  2. Gradually add 2 cups of the powdered sugar, beating well.
  3. Stir in as much of the remaining powdered sugar as you can with a spoon.
  4. Turn out onto a surface lightly coated with a little powdered sugar.
  5. Knead in enough of the remaining powdered sugar to make a stiff dough that is smooth.
  6. Divide into thirds.
  7. Using 1/3 of the dough, knead the red food coloring in until evenly distributed.
  8. Knead the green food coloring into another 1/3 of the dough.
  9. Leave the remaining dough white.
  10. Shape the dough into 3/4 inch balls; place 2 inches apart on baking sheets lined with wax paper.
  11. Press with tines of a fork.
  12. In necessary, dip the fork in powdered sugar to prevent sticking.
  13. Let dry several hours.
  14. Makes about 75 mints.
