Mariah'S Green Salad With Orange Dressing
- 1 head green leaf lettuce or bunch spinach, washed, dried, and chilled
- 1 purple onion medium, sliced into thin rings
- 2 oranges peeled and thinly sliced
- 4 ounces sliced almonds
- 5 tablespoons sugar
- dressing
- 1/2 teaspoon orange peel
- 1/3 cup fresh orange juice
- 2 tablespoons red wine vinegar
- 1/2 cup olive oil
- 1 tablespoon Good Seasons Italian Dressing Mix
- 2 tablespoons sugar
- Place first four ingredients in a salad bowl; chill. In a small skillet, sprinkle 3 Tbls sugar oer the almonds and cook over medium heat, until almonds are coated and sugar has dissolve (they brown quickly--do not burn). (If you want to skip the sugar, you can just brown almonds in the oven.) Place almonds in a small bowl and allow to cool. Mix dressing in a shaker jar; chill. Pour salad dressing over chilled salad and sprinkle almonds over all. Toss & serve.
