Martha Washington'S Cherry Crunch
- pitted cherries 1 16 oz. tart red
- 1 1/2 tablespoons quick cooking tapioca
- 1 cup brown sugar packed
- 1/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup quick cooking oatmeal
- 1/2 cup cherry juice
- 1/2 cup butter 1 stick
- 1 cup flour
- Drain cherries, reserving 1/2 cup juice. Mix cherry juice and tapioca and let stand 15 minutes.
- Melt butter in large bowl and mix in brown sugar, flour, baking powder, soda, salt, and oatmeal to create pastry mixture.
- Put half of pastry mixture into a greased 9x9 or 11x7 baking pan, and scatter over it the cherries and juice mixture. Cover the fruit with the other half of the pastry mixture.
- Bake at 350 for 30 minutes or until light brown.
- Extra delicious with whipped topping or vanilla ice cream.
