Caramel Streusel Bars
- 1 cup flour
- 2 teaspoons ground cinnamon
- 1/3 cup brown sugar packed
- 8 tablespoons butter chopped
- 8 tablespoons butter chopped, at room temperature
- 1/2 cup granulated sugar
- 1 cup flour sifted
- 1/4 cup self-rising flour sifted
- 14 ounces sweetened condensed milk
- 2 tablespoons butter
- 2 tablespoons light corn syrup
- powdered sugar for dusting
- For the topping, sift flour and cinnamon into a medium bowl. Stir in brown sugar. Rub in butter with fingertips until mixture resembles coarse breadcrumbs. Add 1 tbsp water and bring mixture together into a dough. Roll into a log. Wrap in plastic wrap and freeze for 30 mins.
- Meanwhile, preheat the oven to 350u0b0F. Lightly grease an 11 x 7-inch baking pan. Line with parchment paper, extending paper over long sides for handles.
- For the crust, beat butter and granulated sugar in a medium bowl with an electric mixer until light and fluffy. Stir in flours, in 2 batches, until a firm dough forms. Press evenly into prepared pan. Bake for 10 mins. Cool.
- For the filling, place condensed milk, butter and syrup in a small saucepan on medium heat. Cook for 3-4 mins, stirring, until mixture bubbles and thickens. Spread over crust. Grate topping over filling.
- Bake for 10-15 mins, until firm. Cool in pan 15 mins. Remove from pan; cool completely on wire rack. Cut into bars. Dust with powdered sugar.
