Baja Chicken Breast

  1. Add the avocado oil to your large frying pan and bring up to heat.
  2. Add onions and bell peppers and saute for two minutes.
  3. Add chicken breasts, sprinkle with cumin, salt & Pepper and red pepper flakes.
  4. Cover and cook for 5 minutes.
  5. Stir and flip for another 5 minutes.
  6. Pile peppers and onions on top of each breast and cover with one slice of cheese each.
  7. Cover for another minute or two until cheese is melted.
  8. Cooking may vary for different size breasts. Serve with a side of freshly sauteed spinach!
