Baja Chicken Breast
- 4 chicken breasts defrosted and deboned
- 1/4 red bell pepper thin sliced
- 1/4 yellow bell pepper thin sliced
- 1/2 onion diced
- 4 slices provolone cheese
- 1 teaspoon red pepper flakes
- 1/2 teaspoon cumin
- 1/4 teaspoon salt & pepper
- 1 tablespoon avocado oil
- Add the avocado oil to your large frying pan and bring up to heat.
- Add onions and bell peppers and saute for two minutes.
- Add chicken breasts, sprinkle with cumin, salt & Pepper and red pepper flakes.
- Cover and cook for 5 minutes.
- Stir and flip for another 5 minutes.
- Pile peppers and onions on top of each breast and cover with one slice of cheese each.
- Cover for another minute or two until cheese is melted.
- Cooking may vary for different size breasts. Serve with a side of freshly sauteed spinach!
