Nasi Goreng

  1. In a large wok or frying pan, heat 1 tbsp oil over high heat. Stir-fry chicken and shrimp for 2-3 mins, until cooked through. Transfer to a large bowl.
  2. Add remaining oil to pan and place over medium heat. Stir-fry green onions, garlic and chili for 1 min, until fragrant. Add rice, stirring to break up any lumps. Add soy sauce, lime juice, tomato sauce, fish sauce and cilantro. Stir-fry for 2-3 mins, until heated through. Serve with fried eggs, lime wedges, tomatoes and cucumber. Top with extra cilantro.
