Nasi Goreng
- 2 tablespoons peanut oil
- 7 ounces chicken thighs finely chopped
- 10 shrimp peeled, deveined, halved
- 4 green onions
- 1 inch batons
- 2 cloves garlic chopped
- 1 red chili chopped
- 1 1/2 pounds long grain rice cooked
- 1/2 tablespoon soy sauce
- 1 lime juiced
- 1 tablespoon tomato sauce
- 2 teaspoons fish sauce
- 1/2 cup cilantro leaves fresh, plus extra to serve
- 4 fried eggs lime wedges, tomato wedges and cucumber batons, to serve
- In a large wok or frying pan, heat 1 tbsp oil over high heat. Stir-fry chicken and shrimp for 2-3 mins, until cooked through. Transfer to a large bowl.
- Add remaining oil to pan and place over medium heat. Stir-fry green onions, garlic and chili for 1 min, until fragrant. Add rice, stirring to break up any lumps. Add soy sauce, lime juice, tomato sauce, fish sauce and cilantro. Stir-fry for 2-3 mins, until heated through. Serve with fried eggs, lime wedges, tomatoes and cucumber. Top with extra cilantro.
