Spring Vegetable Soup
- 4 tablespoons olive oil
- 2 onions medium, thinly sliced
- 1 head green cabbage trimmed, thinly sliced
- 3 carrots trimmed, thinly sliced
- 3 medium potatoes peeled, sliced into strips
- 3 1/2 ounces button mushrooms
- 3 1/2 ounces shiitake mushrooms sliced
- 4 cups vegetable stock
- 3 tablespoons light soy sauce
- 4 tablespoons creme fraiche
- 2 tablespoons Asian chili sauce such as Sambal Oelek
- Heat olive oil in a saucepan over medium heat. Sweat onions for 2-3 mins, until translucent. Add cabbage, carrots, potatoes and mushrooms. Saute for 3-4 mins, stirring. Add stock and simmer for 8-10 mins. Add soy sauce and season.
- Distribute soup between 4 serving bowls. Add 1 tbsp creme fraiche and some chili sauce to each bowl. Serve.
