Cheesy Ham And Avocado Potatoes
- 4 baking potatoes
- 1 tablespoon olive oil
- 5 1/4 ounces ham chopped
- 1 avocado pitted, peeled, chopped
- 1 tomato chopped
- 2 spring onions sliced
- 3 drops hot pepper sauce
- 1 lime zested and juiced
- 3 tablespoons Parmesan cheese grated
- sour cream to serve
- Preheat oven to 350u0b0F.
- Coat potatoes in oil, season and wrap in foil. Bake for 45-60 mins, or until tender. Let cool slightly. Unwrap and cut a slit halfway through each potato. Place on a foil-lined baking tray.
- Toss together ham, avocado, tomato, spring onions, hot sauce, lime zest and lime juice. Season. Distribute between potatoes and sprinkle with Parmesan. Bake for 5 mins, or until hot and cheese is melted.
- Serve with a dollop of sour cream.
