Cheesy Ham And Avocado Potatoes

  1. Preheat oven to 350u0b0F.
  2. Coat potatoes in oil, season and wrap in foil. Bake for 45-60 mins, or until tender. Let cool slightly. Unwrap and cut a slit halfway through each potato. Place on a foil-lined baking tray.
  3. Toss together ham, avocado, tomato, spring onions, hot sauce, lime zest and lime juice. Season. Distribute between potatoes and sprinkle with Parmesan. Bake for 5 mins, or until hot and cheese is melted.
  4. Serve with a dollop of sour cream.
