Pineapple Upside-Down Ham Loaf
- 1/4 c. firmly packed brown sugar
- 1 tsp. dry mustard
- 3 tsp. vinegar
- 3 slices canned pineapple, drained
- 3 maraschino cherries
- 2 c. ground ham
- 1 c. ground lean pork
- 2 eggs, slightly beaten
- 1 c. milk
- 1 c. cracker crumbs
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 1 Tbsp. minced onion
- Combine brown sugar, mustard and vinegar.
- Blend until smooth. Pour into a 9 x 5 x 3-inch loaf pan.
- Place pineapple slices in a row in brown sugar mixture.
- Put a cherry in center of each. Combine remaining ingredients and spoon on top of pineapple slices.
- Bake at 350u0b0 for 1 1/2 hours.
- Let stand 5 minutes; drain off excess drippings.
- Invert onto service platter.
- Serves about 8.
