Lamb Coconut Curry
- 1/2 kilogram lamb Boneless low fat, in chunks
- 2 onions chopped
- 3 garlic cloves crushed
- 1 green mango cut into long thin slices
- 8 dried figs cut into chunks
- 1 1/2 tablespoons ginger grated
- 1 can coconut milk
- 1/3 cup cilantro diced
- 3 tablespoons coconut oil
- 1 tablespoon turmeric powder
- 1 teaspoon cumin powder
- sea salt to taste
- 1 cup water
- in saucepan, saute onions in coconut oil, until soft. Add lamb, sea salt, cumin and turmeric powder. Stir until lamb turns brown.
- Add water and bring to boil. Cover and boil on medium heat for 30 minutes.
- Add coconut milk and cilantro. Boil for 15 minutes. Add rest of ingredients and boil another 10-15 minutes.
- Serve over rice.
- Note: you can substitue figs with 1/2 cup pineapple.
