Chocolate Hazelnut Cookies
- 1 1/4 cups oatmeal powdered
- 1/2 cup butter room temperature
- 7 15/16 tablespoons granulated sugar
- 3/4 cup brown sugar
- 1 egg
- 1 vanilla bean sliced open with insides scraped out
- 1 cup flour
- 1 tablespoon baking powder
- salt
- 1 cup chocolate chips
- 5/8 cup hazelnuts chopped
- Preheat the oven to 190 degrees Celsius.
- The first step is to grind the oatmeal until it becomes a fine, flour-like powder.
- In a large bowl, mix together the butter, granulated sugar, brown sugar, and egg.
- In a separate bowl, mix together the vanilla bean, flour, baking powder, oatmeal powder, and salt.
- Add the dry ingredients into the wet ingredients and mix until well combined.
- Fold in the chocolate chips and chopped hazelnuts.
- Drop rounds of dough onto a baking sheet covered with parchment paper. Leave room between cookies so they do not stick to each other while baking.
- Bake for 10-11 minutes.
