Moravian Sugar Cakes

  1. Cook 2 medium large potatoes and save water.
  2. Mash potatoes (do not add milk).
  3. Soften yeast in 1 cup warm potato water.
  4. Mix together sugar, salt, eggs and 1 cup melted butter.
  5. Gradually beat in mashed potatoes.
  6. Add 1 cup flour; beat until smooth.
  7. Stir in yeast and beat in enough flour to form a light soft dough.
  8. Cover; let rise in a warm place until doubled, about 2 hours.
  9. Punch down dough and divide into 3 (9-inch) square or 9-inch round cake pans.
  10. Cover; let rise until doubled.
  11. Blend brown sugar and cinnamon.
  12. Make indentations about 1-inch apart.
  13. Sprinkle brown sugar mixture over top, then drizzle with remaining butter.
  14. Bake at 350u0b0 for 20 minutes.
