Sumac Chicken Fillets
- 1 tablespoon sumac
- 1 teaspoon cinnamon
- 1/2 teaspoon ginger
- 1/2 tablespoon turmeric
- 1 tablespoon olive oil
- 1/2 lemon juiced
- 4 chicken fillets
- 4 onions
- salt
- pepper
- 1. Combine the sumac, cinnamon, ginger, and turmeric. In a separate bowl, mix 2/3 of the spice mixture with the olive oil and the juice of half a lemon. Slather the chicken breasts with the mixture using a pastry brush. Marinate in the fridge for at least 30 minutes.
- 2. Preheat the oven to 350F
- 3. Slice the onions.
- 4. Heat a frying pan. Pour in a little bit of oil and add the sliced onions with the remaining spice mixture. Cook them halfway through and then remove them from the pan.
- 5. In the same pan, brown the chicken fillets on both sides.
- 6. Layer half of the onions in a baking dish. Place the fillets on top and cover with the remaining onions. Cover with foil and bake in the oven.
